Hummus Sandwich

8 slices of Bon Matin Whole Grain 12-grain bread
150 ml (2/3 cup) chick pea purée (hummus)
½ English cucumber, sliced
1 red onion, finely sliced
2 tomatoes, sliced
1 red pepper, cut in pieces
250 ml (1 cup) alfalfa sprouts
Salt and pepper to taste

Spread four slices of bread with chick pea purée. Garnish with slices of cucumber, onion and tomatoes, red pepper pieces, then the alfalfa sprouts. Season to taste. Cover with the remaining four slices of bread.
